Hearty Pea and Ham Soup

Pea and Ham Soup

Prep + Cook time = 30 minutes (Serves 6)

• 1 medium onion, diced
• 2 cloves of garlic, chopped
• 1 tablespoon extra-virgin olive oil
• 2 medium stick celery
• 70g shaved leg ham champagne, diced
• 2 large potatoes, peeled, cut into small cubes
• 1 sprinkle black pepper
• 1.5 litres (6 cups) water
• 2 cups frozen peas
• 6 teaspoons plain yoghurt
• 1 tablespoon chopped fresh dill or chives

Method:

• Step 1: Heat oil in a 2.5L pot over medium heat; cook onion and garlic, stirring, for 5 minutes or until softened. Add celery, ham and potatoes, continue stirring, for 2 minutes. Add the water and pepper, bring to the boil; reduce heat, simmer, covered for 15 minutes or until potatoes are tender.

• Step 2: Add frozen peas to soup; covered, for 5 minutes or until hot.

• Step 3: Serve soup topped with teaspoon of plain yoghurt and a sprinkle of dill or chives.
